Ways to Prevent Mold Formation in Homemade Jam
Jam is one of the delicious and beloved Iranian breakfast foods that has had a colorful presence on our tables since ancient times. However, one of the challenges that may arise in the preparation and storage of jam is mold formation.
To prevent mold formation in jams, first, we need to understand its causes and then seek ways to address them.
Why Does Homemade Fruit Jam Mold?
- The main reason for mold formation is the presence of moisture.
- Inadequate washing of fruits.
- Using fruits that are not fresh and healthy.
Ways to Prevent Homemade Jam from Molding:
-
- Achieving the Right Thickness: When making syrup or jam, it is crucial to ensure that the ingredients reach the required thickness. Otherwise, if the mixture is too thin, moisture will be present, and it will require higher heat to reach the desired consistency.
- Using Natural Acids: Adding natural acids like citric acid found in lemon juice or malic acid found in apples can be helpful.
- Sufficient Sugar Content: Sugar plays a vital role in preventing mold formation in jam. Using an adequate amount of sugar (determined by following the correct jam-making method) acts as a preservative and antimicrobial agent.
- Using Airtight Glass Containers: Utilize airtight containers with proper sealing to prevent air penetration.
- Refrigeration: Store the jam in the refrigerator.
Preventing Syrup Crystallization:
15 minutes before turning off the gas stove, add one to two teaspoons of lemon juice to the ingredients and mix well. Then, remove the mixture from heat after 15 minutes.
While preparing jam, you can also store extra syrup in a suitable container and keep it in the refrigerator. Since syrups are commonly used during the summer season, refrigeration is necessary to prevent mold formation.
