Damavand is one of the most important cities for the production and export of high-quality apples worldwide. The reputation of Damavand apples is due to their aroma, taste, and quality. The soil in Iran, where apples grow, makes a significant difference in the flavor of the fruits.
The time when apples ripen varies depending on their variety, starting from late April to reaching their peak in autumn and Mehr month. The apple from Damavand is then harvested and offered in the market.
The diversity in apple types has created various preferences among people. Some prefer red apples, some like yellow apples, and many adore the Damavand Golab apple. Nevertheless, apples of any kind serve as a staple fruit for daily consumption and entertaining guests.

For making suitable apple jam, you should select apples that are less ripe, slightly tart, and slightly sweeter. In other words, you should not choose fully ripe apples for making jam.
Important Housekeeping Tip: For jam, use firmer and less ripe fruit, and for making vinegar or fruit leather, use fully ripe fruit that is on the brink of spoilage, such as various types of plums.
برای تهیه سیب مناسب مربا باید سیبهایی را انتخاب کنیم که نرسیده تر، ترش و ملس تر باشد یعنی برای مربای هر میوه های نباید از رسیده های انتخاب کنیم
نکته خانه داری خیلی مهم : برای مربا از میوههای سفت تر و نرسیده تر و برای درست کردن سرکه یا لواشک از میوه های کاملا رسیده ای که در آستانه خراب شدن هستن مثلا انواع آلو ها که دیگه بسیار رسیده و له شدن برای سرکه و لواشک بهترین گزینه هستند .
:How to Make Apple Jam
Ingredients for one kilogram of apples:

Sugar: 1 kg
Lemon juice: 3 tablespoons
Saffron (crushed): 1 tablespoon
Rosewater: 4 tablespoons (optional, according to your taste)
Steps:
Wash the apples, peel them, and chop them into pieces *
Place the chopped apples in a bowl or saucepan *
Add a cup of lemon juice to the bowl containing the chopped apples and let it rest in the refrigerator for a few hours to drain excess water *
In another saucepan, pour four cups of water and turn on the heat. When the water is about to boil, gradually add the sugar and stir *
Add the drained apple pieces to the boiling syrup and let them cook over low heat for 30 to 45 minutes until the mixture thickens (note that the jam will firm up a bit after it cools)
After turning off the heat, add saffron and rosewater to the mixture, and stir *
Let the mixture cool and thicken further with time, then pour it into suitable jars and store in the refrigerator *
