What is Ghavoot?
Ghavoot, also known as Ghovato or Ghovat, is a special foodstuff found in various regions of Iran, including Kerman, Kashan, Kermanshah, etc., and is referred to in different dialects in various cities.
What are its Components?
Ghavoot is a sweet powder consisting of ground nuts, and its ingredients vary from region to region in Iran.
This sweet powder is highly nutritious, warm in nature, energy-giving, and rich in minerals, unsaturated fats, fatty acids, and antioxidant compounds.

Ingredients of Kashan’s Ghavoot:
Kashan’s Ghavoot, or Ghand Ghavoot, is typically made from a mixture of pistachio powder, almond powder, hazelnut powder, and spurge seed powder, combined with sugar powder or granules.
The most complete composition of Ghavoot, or Ghovato in the Kermani dialect, is specific to the city of Kerman.
Ingredients of Kerman’s Ghavoot:
Sunflower seeds, sesame, spurge seeds, flax seeds, coriander seeds, black seeds, black cardamom or large cardamom, official cardamom or black cardamom, vetch, barley, poppy seeds, common vetch, lettuce seeds, Rygrass, and coffee are cleaned, roasted (or “given aroma” in local terms), then ground with sugar and combined.
Given the presence of sugar, people with diabetes should consume it with caution.
Ghavoot has a great variety, as mentioned earlier, it has different combinations in different parts of Iran, but generally, it is prepared and served from a mix of various nuts, seeds, chickpea flour, along with sugar or candy soil, which plays a significant role in health and energy rejuvenation.
Additional Ghavoot Ingredients:
Ghavoot’s composition may also include wheat powder, melon seeds, ginger, and clove tree buds.
How is High-Quality Ghavoot Identified:
1- The quality of Ghavoot depends on its fresh aroma and flavor. It should not have an unnatural bitter or sharp taste due to the oxidation of fats or a burnt flavor resulting from excessive roasting of the nuts. It should not carry the taste or smell of environmental conditions.
2- Ghavoot’s packaging should be such that it prevents the ingress of oxygen and does not absorb moisture.
3- The most important factor affecting the quality of Ghavoot is the amount of sugar and other components. The ratio of sugar alone to other components should not be equal or half.
Types of Ghavoot:
1- Traditional 4-Nut Kashan Ghavoot
2- Traditional Kerman Ghavoot
3- Forty Plant Ghavoot
4- Pistachio Ghavoot
5- Borago Ghavoot
